Healthy Thai Chili (Gluten free, dairy free): for vegan or meat eaters

This is so easy and delicious! 
Ingredients:

1 Sweet potato cubed
1 red pepper, 1 green pepper and 1 yellow pepper diced
1 cup of mushrooms
1.5 tsp of red curry paste
1.5 cup of coconut milk
1 can of Kidney beans
1 can of black beans
1/2 cup of tomato puree
2 chopped scallion
8 oz of cooked salmon or 8 oz of cooked chicken or beef (Optional)

Red curry paste mixed with the coconut milk until smooth over the stove. Heat the mixture and add one sweet potato, one red and one green pepper cubes and any other veggies you like. Heat up for 10 min. Add kidney beans and black beans, tomato puree and scallions. Cook for 25 more minutes on medium heat. Enjoy!
